Поточни пастьоризатори се инсталират в средни и големи по мащаб производства от хранителната индустрия заради високата си ефективност, прецизност на процеса и възможност за пълна автоматизация. Този вид пастьоризатори се проектират и изработват съобразно спецификите на продукта, за който ще се използват: прясно мляко, плодов сок, вино, бира, минерална вода.
За разлика от обемния пастьоризатор, който представлява изолиран съд с определен обем, при поточните пастьоризатори начинът на работа е организиран като поток.
В съд за постоянно ниво се подава продуктът, който ще се пастьоризира. Оттам с помощта на помпа се изтегля, минава през пластинчат топлообменик, където температурата му се повишава до необходимото ниво. Продължава към друг съд, където престоява за кратък интервал от време и накрая се пристъпва към охлаждане на принципа на регенерация.
Характерно за поточния пастьоризатор е, че се проектира и изгражда съобразно спецификите на флуида, който ще се пастьоризира: прясно мляко, плодов сок, вино, бира, минерална вода. Веднъж зададен, режимът на работа на съоръжението се променя много трудно и не е препоръчително да се прави.
