This multipurpose vessel is applicable in various process operations in the production of dairy products. It can be used as a volumetric pasteuriser or cheese maker in small dairies that process up to 1000L of milk per day.
The multipurpose vessel is the “heart” of any small dairy equipment, being used in the role of pasteuriser or cheese maker. Stabilengineering-Alpha manufactures such vessels in stainless steel and with a standard volume of 250L or 500L.
The following technological operations can be carried out in the multipurpose vessel: heating, stirring, pasteurization, holding, cooling, souring, biological ripening, curdling, curd cutting, curd processing, delactization.
The facility is an enclosed insulated cylindrical vessel, usually with a conical lid with an opening hatch. It is fitted with a planetary stirring mechanism. Its construction is stable and with adjustable heels. The heating and cooling of the milk takes place by means of a water jacket, coil type, mounted on a shell and bottom for the supply of a heat carrier – hot water or a cold carrier – water or ice water. In order to improve heat transfer, thermal insulation and a stainless steel liner are placed over the jacket.
