The draining drum is a facility with applications in the dairy industry, being used by large production plants for the efficient separation of whey from curd in the production of cheese.
A draining drum is used in dairies for cheese production, and is placed on the line after the cheese maker before the curd grains are fed into the cheddaring trolley. It is designed for use when processing large quantities of milk (e.g. when working with a cheese maker volume of more than 2 tons).
The operations performed by the draining drum are: taking the cheese mass after processing into the cheese maker, straining the excess whey and feeding the strained cheese mass to the cheddaring trolley.
The actual separation of the curd occurs by slow rotation of the drum driven by a motor. During the process, the separated whey is collected in the vat of the drum, from where it can be transported by pump to a storage vessel.
