Curd makers are stainless steel vessels with applications in the dairy industry, used to obtain curd from the whey for cheese, with the possibility of mixing with whey from white salted cheese. The vessels are made according to the customer’s specifications and are available in different versions.
The curd- maker is mainly used by dairy companies with a capacity of working more than 1000L of milk per day.
In order to obtain the final curd product, whey (mainly from cheese) is poured into the curd maker, acid is added and the mixture is heated to 85-90°C. Preferably, the whey is heated directly with nozzles through which steam purified through a filter is passed. Another method is indirect heating, in which case a propeller agitator is also installed.
The facility is a vertical cylindrical vessel with a conical bottom and a flat or conical top. Its construction is robust and with the option of insulation. It is equipped with observation glasses for monitoring the process and taps for draining the whey and the finished curd. The height of the curd maker is tailored so that a trolley can be easily placed underneath for direct collection of the finished product.
